knit pants
The boys need some lightweight spring/summer pants to replace some pants that they already have and are about to outgrow. So, I picked up some knit fabric online, studied my Kwik-Sew Sewing for Toddlers, and closely examined the pants I'm trying to copy.

They look pretty simple. There are no side seams, just a center seam, inner leg seams, elastic inserted in a casing at the waist and simple topstitched hem at the bottom. I want to fiddle around with the Kwik-Sew pattern a bit, so that the pants end up looking more like the ones I'm copying, and then I should be all set to make what I hope will be a few quick and easy pairs of pants!

Looks like a great project! I've made two pairs of one-seam (no side seam) pants like this, and they're great confidence boosters. And once you get going you can really crank them out, especially in a toddler size.
Here is an easy method for inserting waist elastic that you might try:

It gives a more store-bought result than the traditional method.
I looked over your project gallery today, and I wish I could knit like that! I started a project once (a scarf) but after two years it's about 3 feet long, and I've more or less given up on it. Sewing is so much faster for me, that it's hard to take the time to learn to become a faster knitter.

Alison, is there anything you can't do that ends up great? ;) The KwikSew books are great sources of info to sew up easy garments.
I checked out the link Eli provided, I might have to try this soon.
Of course reading this sewing blog gets me wanting to sew again too! ACK! Too much projects, so little time. ;)
Thanks for the tip, Eli! Jo, I hope I can do a good enough job on these pants to live up to your praise. If you start sewing again, be sure to put some pics up on your blog, ok? :)
